Moroccan Bisque: Curried Squash & Sweet Potato Soup

Preparation Time: 45 minutes

Ingredients

2 medium onions, chopped
3 cloves of garlic, minced
1 tablespoon curry powder
1/2 teaspoon ground cumin
8 cups chicken stock
1 cup banana, mashed
1 cup pineapple, cubed
2 pounds butternut squash, peeled and sliced
1 pound sweet potato, peeled and sliced
1/2 cup plain yogurt
1 tablespoon vegetable oil
Coriander sprigs

Method

In a heavy stock pot over medium heat, add oil.
Sauté onions and garlic for 2 -3 minutes or until slightly softened.
Stir in curry powder and cumin, cook for 1 minute.
Add chicken stock, banana, pineapple, squash and sweet potato.
Bring mixture to a boil and adjust seasoning.
Reduce heat and simmer for 30 - 40 minutes or until vegetables are tender.
Puree mixture with a food processor until smooth, then pass through a strainer.
Return mixture to heat and adjust seasoning.
Serve hot with a spoon of yogurt and coriander sprigs.
