Yogurt and Honey-Lemon Dressing

This dressing is low in fat
Cutting back on mayonnaise and sour cream is not much of a hardship
any more thanks to new low-fat recipes based on yogurt. Mustard,
honey, lemon and mint are key ingredients here.
The idea is courtesy of Heart and Soul Cuisine from The Estates

Yogurt and Honey-Lemon Dressing

Non-fat yogurt
|
1/2 cup
|
Stone-ground mustard
|
3 tbsp.
|
|
Honey
|
3 tbsp.
|
Grated rind and juice of
|
1 lemon
|
|
Chopped fresh mint
|
1/4 tsp.
|
Salt
|
1/2 tsp.
|
|
black pepper
|
1/8 tsp.
|
Combine yogurt, mustard and honey in large bowl. Add lemon rind,
juice, mint, salt and pepper. Taste and adjust seasoning.
Makes 1 cup. Two tablespoons have 40 calories plus traces of
fat and cholesterol.
