Serves 6 This rice salad is a spectacular addition to any buffet table. For best results, I suggest using long-grain rice. |

| Heat oil in a saucepan over medium heat. Sauté carrots, onions, celery, peppers, garlic and corn until tender, about 4 minutes. Deglaze pan with white wine, reduce until almost dry and add tomatoes, Vegetable Stock and rice. Bring to a boil, reduce heat and simmer until rice is fully cooked, about 18 minutes. Season with filé powder, Tabasco, salt, pepper and lemon juice. Add clams, mussels with shrimp. Continue cooking over low heat until seafood is cooked through, stirring constantly to prevent sticking, about 10 minutes. Discard any unopened clams or mussels and fold in chopped coriander. Serve warm or at room temperature. Garnish with chopped chives. |
| *For the Vegetable Stock: |
| 1 teaspoon vegetable oil | 5 mL |
| 1 cup roughly chopped onions | 250 mL |
| 1 cup roughly chopped celery | 250 mL |
| 1 cup roughly chopped carrots | 250 mL |
| 1 clove garlic | 1 |
| 1 bay leaf | 1 |
| 2 sprigs thyme | 2 |
| 10 whole peppercorns | 10 |
| 7 cups cold water | 1.7 L |
| Heat oil in a large stock pot. Sauté onions until soft and add celery, carrots, garlic, bay leaf, thyme, peppercorns and water. Bring to a boil, reduce heat and simmer 45 minutes or until vegetables are soft. Strain and reserve stock. |
